Caesar Salad


Caesar Dressing
Ingredients:

1)   2 Egg Yolks
2)   1/4 cup Red Wine Vinegar
3)   1/2 tsp. Dijon
4)   1 tbs. Garlic
5)   1 tsp. Lemon Juice
6)   1 cup Extra Virgin Olive Oil
7)   1/4 cup freshly grated Parmesan Cheese
8)   Salt and Pepper to taste
9)   6 small to medium Anchovy Filets



Tournedos Rossini


Truffle Sauce
Ingredients:
1)   1 cup Veal Sauce or Beef Stock
2)   1/4 cup Madeira
3)   1/4 cup Cognac
4)   8 oz. Filet Trim
5)   1 Carrot, 1 piece Celery, 1 Onion
6)   1 Bay Leaf, 2 Cloves, 3 Peppercorns
7)   1/2 cup White Wine
8)   1 tbs. Tomato Paste
9)   1 clove of Garlic or 1 tsp. - chopped
10) 2 tbs. Truffle Oil
11) 1 tsp. minced grade A Foie Gras


Pastry Cream
Ingredients:
1)   4 Egg Yolks
2)   1/2 cup of Milk
3)   1/4 cup of Sugar
4)   2 tbs. chopped Orange Zest
5)   1 tsp. Corn Starch


Grand Marnier Sauce
Ingredients:
1)   2 Egg Yolks
2)   1 cup of Half and Half
3)   1 tbs. Orange zest - chopped
4)   Splash of Vanilla
5)   2 oz. Grand Marnier
