Duck Breast with Berry Sauce

Ingredients for the Duck:
1)   2 duck breasts
2)   salt

Preparation:
1    Score skin of duck breast
2)   Saute the duck breasts with the skin side up until done.
3)   Add the salt while the ducks are being sauted.

Ingredients for the Berry Sauce:
1)   1 pint of Blackberries or Raspberries
2)   Juice of one lemon
3)   1/2 cup sugar
4)   One cup water
5)   1/2 Cup Veal Stock
6)   Salt
7)   Pepper

Preparation:
1)   Bring water to a boil.
2)   Add Sugar.
3)   Stir until dissolved.
4)   Add berries.
5)   Boil for 5 minutes.
6)   Add lemon juice and stocks.
7)   Boil for another 10 minutes.
8)   Season with salt and pepper.


Mushroom Cassoulet

Ingredients:
1)   1/2 pound Cremini Mushrooms
2)   1/2 pound shiitakes
3)   2 tbsp. olive oil
4)   1/4 cup finely diced shallots
5)   1/3 cup white wine
6)   1/8 cup heavy cream
7)   1/2 cup head radicchio
8)   1/4 cup grated parmesan
9)   1/4 cup grated Bel Paese (or havarti)
10)  1/4 cup crumbled gorgonzola or 1/8 cup blue cheese.
11)  6 leaves fresh sage

Preparation:
1)   Sweat shallots in oil.
2)   Add sliced mushrooms and radicchio.
3)   Cook until wilted.
4)   Add white wine.
5)   Cook until wine is almost gone.
6)   Add cream.
7)   Bring to a boil.
8)   Simmer for 3 minutes.
9)   Remove from heat.
10) Add sage, cheeses and salt and pepper to taste.
11) Spoon into ramekins.
12) Bake for 20 minutes at 325 degrees.


Spinach Salad with
Goat Cheese

Ingredients for the Roasted Garlic Vinaigrette:
1)   1/2 cup shallots
2)   2 heads of garlic, roasted
3)   2 cups Champagne Vinegar
4)   5 cups olive oil
5)   salt and pepper

Preparation for the Roasted Garlic Vinaigrette:
1)   In a blender combine shallots, garlic, vinegar, salt and pepper.
2)   Blend for 30 seconds.
3)   Let sit for 3 minutes.
4)   Turn blender on lowest setting and slowly pour in olive oil.
5)   Blend for 3 minutes.

Ingredients for the Goat Cheese:
1)   One log of goat cheese cut into 2 ounce rounds
2)   1 egg well beaten
3)   1 cup flour
4)   1 cup bread crumbs
5)   salt and pepper

Preparation for the Goat Cheese:
1)   Add salt and pepper to flour to taste.
2)   Add a pinch of salt to egg wash.
3)   Coat each piece of cheese with flour, then dip in
       egg wash, then coat with bread crumbs on one side.
4)   Place in well oiled cookie sheet or pie pan.
5)   Turn over.
6)   Bake at 375 degrees until browned...about 20 minutes.

Final Preparation:
Serve on dressed spinach leaves with sliced roasted
garlic cloves.
