Oatmeal Cream Pie


Ingredients:

1)   1/4 Cup Vegan Butter (see recipe below)
2)   1 Flax Egg
3)   1/3 Cup Honey
4)   1 tsp. Vanilla
5)   1 Cup Oatmeal
6)   2 Cups Coconut Flour
7)   2 Arrowroot Powder
8)   4 tsp. Cinnamon
9)   3/4 tsp. Nutmeg
10) 1/2 tsp. Baking Soda
11) 1/2 tsp. Sea Salt
12) 2 tsp. Finely Ground Flax Meal
13) 3/4 Cup Unsweetened Shredded Coconut

Preparation:
1)   Preheat Oven to 350 degrees.
2)   Blend Butter and “egg” for 30 Seconds then add all ingredients and mix
       until incorporated.  
3)   Scoop out golf ball size pieces and place on greased or paper lined tray
       and flatten.
4)   Bake 10 minutes.

The Vegan Buttercream
Ingredients:

1)   1 Cup Vegan Butter
2)   3 Cups Coconut Powdered Sugar
       (1 Cup to 1 tbs. Coconut Sugar to Arrowroot Powder)
3)   2 tsp. Cashew Milk
4)   Vanilla to taste

Preparation:
1)   Blend all to form a cream consistency and fill in center of cookie and top
       with another cookie.




Pecan Pie

The Crust
Ingredients:

1)   2 Cups Almond Flour
2)   1/4 tsp. Cinnamon
3)   1/2 tsp. Sea Salt
4)   3 tbs. Coconut Sugar
5)   8 tbs. Vegan Butter


The Filling
Ingredients:

1)   2 Cups Pecan pieces
2)   1 Cup Maple Syrup
3)   3/4 Cup Date Paste(Blended Dates)
4)   3 Flax Eggs
5)   1/4 Cup Vegan Butter
6)   1 tsp. Vanilla

Preparation:

1)  
Preheat oven to 375 degrees.
2)   Bake pie crust for 15-20 minutes or until set and firm. 
3)   Blend all filling ingredients and pour into pie crust bake for another 20-30
       minutes or until set.



French Apple Tart

The Crust
Ingredients:

1)   2 Cup Almond Flour
2)   1/4 tsp. Cinnamon
3)   1/2 tsp. Salt
4)   3 tbs. Coconut Sugar(Melted)
5)   8 tbs. Vegan Butter


Preparation:
1)   Preheat oven to 375 degrees.
2)   Mix all ingredients and fill tart pan or muffin tin (for mini tarts).
3)   Bake for 15 – 20 Minutes or until crust is firmly set.


The Filling
Ingredients:

1)   Ten 8 oz. Apples (Peeled, cored and sliced)
2)   4 tbs. Vegan Butter
3)   2 tbs. Water
4)   1/2 tsp. Salt
5)   4 tbs. Coconut Sugar
6)   Lemon Zest

Preparation:
1)   Cook 3 of the apples for 10 minutes in a sautee pan with half of the
       other ingredients except for remaining apples.
2)   Puree in food processor while cooking the remaining apples for 4
       minutes with the rest of the ingredients.
3)   Fill baked tart shell with pureed apples and then fill apple slices in a
       shingle pattern starting at the outside edge until filled completely.
4)   Brush top with a little more vegan butter and bake for 20-30 minutes.
