Triple Chocolate Biscotti


Ingredients:
1)   1   all-purpose Flour
2)   1/3 cup Unsweetened Cocoa Powder
3)   2 tsp. Baking Powder
4)   tsp. Salt
5)   1 cup Sugar
6)   6 tbs. unsalted Butter, room temperature
7)   3 large Eggs
8)   1 tsp. Vanilla Extract
9)   8 ounces Semisweet Chocolate Chips
10) cup White Chocolate Baking Chips
11) 1 cup White Chocolate - melted

Preparation:
1)   Preheat oven to 350 degrees.
2)   Sift flour, cocoa, baking powder and salt together.
3)   Using a mixer beat sugar and butter until blended, add eggs one at a time then
       add the vanilla, add then flour mixture and beat until combined.
4)   Stir in semisweet chocolate and add the white chocolate chips. 
5)   Form dough into a long flat log on a baking sheet lined with parchment paper. 
6)   Bake logs until tops are cracked and dry about 25 minutes.  Cool 10 minutes. 
7)   Reduce oven temperature to 300 degrees.
8)   Slide the log off the baking sheet carefully. 
9)  Gently cut warm logs crosswise into a 1 inch slice. 
10) Place each slice back on the baking sheet and cook for another 10 minutes. 
11) Once the slices are cool dip each piece into melted white chocolate and let dry.
12) Place in a container and serve with coffee.




Dried Cranberry and Dark Chocolate Biscotti

Ingredients:
1)   2 cups All-purpose Flour
2)   1 tsp. Baking Powder
3)   tsp. Salt
4)   1 cups Sugar
5)   cup unsalted Butter, room temperature
6)   2 large Eggs
7)   1/2 tsp. Almond Extract
8)   1 cup dried Cranberries
9)   Melted Dark Chocolate

Preparation:
1)   Preheat oven to 350 degrees.
2)   Sift flour, baking powder and salt together.
3)   Combine butter and sugar in a mixing bowl. Once combined, add the eggs
       one at a time and the almond extract.  Stir in cranberries.
4)   Take the dough out and roll into a log then flatten with your fingertips. 
5)   Place on a baking tray covered with parchment paper.
6)   Put biscotti in the oven until golden brown and cracked about 25 minutes. 
7)   Cool for 10 minutes.
8)   Reduce oven temperature to 300 degrees.
9)   Gently remove the log from the baking tray and cut diagonally into 1 inch pieces. 
10) Place them back on the tray and cook again for another 10 minutes.
11) Once cool dip each biscotti piece in melted dark chocolate. 
12) Place in a container when chocolate is dry.
13) Enjoy with coffee or hot chocolate.



Almond Anisette Biscotti


Ingredients:

1)   1 cup Sugar
2)   1/2 lb. (2 sticks) Butter
3)   4 Eggs
4)   4 cups Cake Flour (lightly packed)
5)   4 tsp. Baking Powder
6)   1 tsp. Salt
7)   1/3 cup Anisette
8)   2 tbs. Almond Emulsion
9)   1/3 liquid equal parts Vanilla & Brandy

Preparation:
1)   Cream together the sugar and butter.
2)   Add the eggs and combine in a bowl.
3)   Add the rest of the ingredients and mix in a mixer.
4)   bake at 275 degrees until golden.

Macadamia Nut Ginger Biscotti


Ingredients:

1)   1 cup Sugar
2)   1/2 lb. (2 sticks) Butter
3)   4 Eggs
4)   4 cups Cake Flour (lightly packed)
5)   4 tsp. Baking Powder
6)   1 tsp. Salt
7)   2 cups Almonds
8)   2 tbs. Anise Seeds
9)   Macadamia Ginger
10) 2 cups Macadamias
11) 1 cup chopped Candied Ginger

Preparation:
1)   Cream together the sugar and butter.
2)   Add the eggs and combine in a bowl.
3)   Add the rest of the ingredients and mix in a mixer.
4)   Bake at 275 degrees until golden.
