Blueberry Cobbler

Ingredients:
The Filling:
1)   1 lb. of Blueberries
2)   4 oz. Brown Sugar
3)   8 oz. Orange Juice
4)   4 oz. Corn Starch
5)   2 tsp. Cinnamon


The Topping:
1)   14 oz. All-purpose Flour
2)   2 oz. Brown Sugar
3)   1 tbs. Baking Powder
4)   1/2 tsp. Salt
5)   4 oz. Butter, cold and cubed
6)   14 oz. Heavy Cream


Preparation:

1)   Combine all the filling ingredients in a bowl.
2)   Pour into baking dish.
3)   Mix all dry topping ingredients together.
4)   Cut in cold butter until crumbly.
5)   Add cream until it forms a dough.
6)   Refrigerate until needed.   This is the topping.

7)   Top the filling ingredients with the topping.
4)   Bake 350 degrees for 25 to 30 minutes.




Strawberry Rhubarb Pie
  .

Ingredients:

1)   1 Rhubarb (cut)
2)   1 1/2 lb. of Strawberries (cut)
3)   8 oz. Brown Sugar
4)   2 tsp. Cinnamon
5)   1/2 zest of Orange
6)   4 oz. Cornstarch
7)   Pie Shell 


Preparation:
1)   Mix together the first 6 ingredients and pour into pie shell.
2)   Bake 25 to 30 minutes at 350 degrees.


Strawberry Shortcake
 

Ingredients:
1)   1 Shortcake Biscuit (see recipe below)
2)   1 cup Strawberries (sliced and sugared) and juice
3)   1 cup Whipped Cream
4)   1 sprig Mint
 
Preparation:
1)   Cut biscuit in half and place bottom part onto round lunch plate.
2)   Place half cup of whipped cream on bottom half of biscuit.
3)   Place one cup of strawberries and juice on top of whipped cream.
4)   Place biscuit top directly on strawberries.
5)   Add remaining half cup of whipped cream on top half of biscuit.
6)   Garnish with a few slices of strawberries, juice and mint leaf garnish.

The Biscuit:
Ingredients:
1)   6 quarts All Purpose Flour
2)   2 lb. granulated Sugar
3)   3 lb. Butter, sweet, small cubes
4)   5 oz. Baking Powder
5)   3 oz. Salt
6)   9 cups Buttermilk
7)   Heavy Cream
8)   Granulated Sugar

Preparation:
1)   Sift together all dry ingredients.
2)   Mix in butter by hand until small pea size shape.
3)   Mix in buttermilk by being careful not to overwork.
4)   Roll out until 1" thick and cut into circles using 4" ring mold.
5)   Brush with heavy cream and sprinkle with sugar.
6)   Bake at 325 degrees for 30 minutes.
